Sippin' on gin n juice...not really.

I have been on an insane juice cleanse kick ever since my colleague Amanda introduced me to Nekter Juice Bar . I'm on my 3rd cleanse in a month and a half. My reasoning? I need to reset my body. Spicy lemonade to fire up that metabolism :) I have not been honoring myself in any way lately. I work long hours and don't do much in the way of exercise. Factor in daily bought lunch and you've got a recipe for disaster. So i've juiced and I have to say it's been good. It's been a blessing in disguise not having to think about what to eat for breakfast, lunch or dinner, lol But the benefit isn't in placating my laziness. I'm getting all my fruits and veggies and my body has been taught to crave those things. Hopefully i'll be able to keep the train rolling along through these greener pastures. I've been on an extended "vaca." AFK for awhile, if you will.  Just didn't have it in me to post anything.  I'm 1 wk away from a move to Oceanside, CA....and ecstatic at that...but moving still sucks.  Honestly. I.HATE.MOVING. I've done it too much in the last couple of years. ...some cheese with my whine, please... Which brings me to this post.  PIZZA. Quite possibly one of the best culinary blessings on the planet...if done right.  Sadly, I took this gem for granted while in Jersey City/NYC...the end all, be all, mecca o'pizza.  Sure, some will argue, how can I possibly make such a claim...? What about Italy - the birthplace of this miracle food?  Not for nothing, but i'm told pizza actually originated in Greece.  I know. Sacrilege.  Whatever the case may be, i've been to Europe, and sorry...but no place makes better pizza than NYC & JC. My Valentine's Day post suggested making cupcakes for the sweet significant other in your life.  I thought long and hard about what kind of cupcakes i'd make.  While skipping joyfully through the aisles of the local Filipino food mart in Riverside, CA....and naturally, plucking from the shelves all the ube (purple yam) infused foods I could find, it hit me.  Ube cupcakes.  Duh. They're sweet and they're purple. Can't go wrong for Valentine's <3 I found this recipe online @ kirbiecravings.com : Ingredients 1 cup grated ube yam (can be found frozen in Asian markets) 2/3 cup milk 1/2 teaspoon vanilla extract 12 Tablespoons butter (1.5 sticks), softened 2 1/4 cups sugar 4 large eggs 4 Tablespoons vegetable oil 3 cups cake flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt Directions 1.
